Gluten Free Christmas Cake 
Delciously Fruity and Nutty....
100g or Almond or Hazelnut Meal
3 eggs or egg replacer
2 tblspns of honey
1 tspns of vanilla
2 tbspns of dark rum or brandy
1 cup of cherries roughly cut
500g mixed fruit (use premix or cut up your own choices)
450g mixed nuts (optional if you need to avoid)
100g of coconut (optional)
Method:
Beat the eggs until they are creamy or mix together the egg replacer and water with the honey, essence and rum or brandy.
Add into another bowl the dry ingredients. Mix by hand.
Pour wet ingredients over the dry and mix well by hand.
Prepare baking tins with non-stick spray, large muffin trays are perfect.
Divide mixture evenly and bake in a slow oven at about 150 o C for approximately 30 - 40mins.
These can also make a fabulous gift for friends and family, wrap in alfoil and add ribbon.
