Gluten Free Vegetable Frittata  

Use a combination of any of the following baked vegetables. 

Potato, pumpkin, capsicum, eggplant, sweet potato, tomatos, onions, carrot.

Tip: If you are baking a roast meal one night simply bake a little extra vegetable to make this recipe even easier to prepare.  Great for lunches or a quick snack.

Using a pre-greased baking dish layer all the sliced baked vegetables on top of each other until the baking dish is 3/4 full.

Prepare egg mixture using the following:

Approx: 6 eggs, 1/2 small container of cream, cottage cheese or ricotta, seasoning(salt & pepper), some fresh herbs(eg. basil, oregano,parsley-whatever is in season). Optional you can add a little bacon or ham.

Beat the eggs well, add the other ingredients and stir well until well blended.  Pour mixture over the baked vegetables. Sprinkle with parmeson cheese.

Bake in the oven until lightly browned on top.  Approx. 30 - 40mins.
