Gluten Free Spinach Pie
(this was a successful failed gnocchi attempt)
Use:
1 Bunch or 8 leaves of spinach (chop and boil in water for 2 minutes)
1 250 g tub of ricotta cheese
90g of grated parmeson cheese
1 cup of boiled millet seed
1 egg
1/2 cup of gluten free flour
1/4 teaspoon of nutmeg
Salt and Pepper
Boil Millet seed per packet instructions.
Set aside 1/2 the grated parmeson. Mix together all ingredients and turn into a baking dish
top with extra parmeson and bake in the oven until golden brown on top.
This was so delicious I had to share the recipe with the dinner guests.
